These Gooey Make-Ahead Cinnamon Rolls Are To Die For

We all love the idea of a morning spent wearing loungewear essentials and eating freshly baked cinnamon rolls, but who wants to get up at the crack of dawn (on the weekend?!) to do all that work? We knew there had to be a way to enjoy those gooey, yeasty sweet rolls without skimping on sleep, so we set out to create the perfect make-ahead cinnamon roll recipe.

You’ll prep the dough and shape the rolls the night before, then tuck them in to the fridge for an overnight rise. Pull the dish out when you wake up and pop it into the oven. By the time you’ve made one of your delicious coffee co*cktails and set the table, the rolls be just about ready to eat. Our dough is enriched with plenty of butter and eggs so it won’t dry out overnight. Plus, it’s easy to work with so you can master those cinnamon spirals.

Cinnamon Rolls with Maple Cream Cheese Frosting (Makes 12 Rolls)

Recipe Notes: If you want to break up the work even further, you can make the dough and store in the refrigerator up to 24 hours prior to rolling out and shaping your rolls. Just be sure to allow it to come to room temperature before trying to roll it out. You can also make the maple cream cheese frosting in advance. Simply refrigerate in an air-tight container with a layer of plastic wrap directly on the surface of the frosting for up to 48 hours in advance. We packed our rolls tightly into a pan because it fits more easily in the fridge, but you can also space them further apart on a parchment-lined rimmed baking sheet if you’d like them to puff up a bit more. Note that we used instant yeast (versus active dry) so you can skip out on the extra step of activating yeast.

Cinnamon Rolls Ingredients

Dough:

  • 4 1/2 cups all-purpose flour
  • 1/3 cup sugar
  • 2 teaspoons kosher salt
  • 2 1/4 teaspoons instant yeast
  • 3 large eggs
  • 1 cup milk, warmed to approximately 100°F
  • 12 tablespoons unsalted butter at room temperature and divided into 1-inch pieces
  • 4 tablespoons unsalted butter, melted, plus more for greasing your baking pan
  • 3/4 cup brown sugar mixed with 3 tablespoons ground cinnamon

Maple Cream Cheese Frosting:

  • 4 tablespoons unsalted butter at room temperature
  • 8 ounces cream cheese at room temperature
  • 2 tablespoons maple syrup
  • 1 cup powdered sugar
  • 1-3 tablespoons milk (optional)

Equipment:

  • stand mixer with a dough hook
  • 9- x 13-inch baking dish or a “half-sheet” pan

1. Make the dough. In the bowl of your stand mixer, combine flour, sugar, salt, and yeast.

2. In a separate bowl, whisk together the eggs and warm milk.

3. Add wet mixture to your dry ingredients. Using the dough hook attachment, mix on medium speed until the dough forms a large cohesive mass. If the mixture still has dry patches of flour you can add extra milk, a tablespoon at a time, as needed.

4. Add the butter one piece at a time, waiting 20 seconds or so between each addition and continuing to mix for another minute or two after all the butter has been incorporated. The dough should be fairly sticky at this point.

5. Turn out onto a floured surface and knead a few times by hand to form a smooth ball.

6. Place in a lightly greased bowl, cover loosely with plastic wrap and allow to rise in a warm area.

7. After an hour, the dough should approximately double in size.

8. Shape into rolls. When the dough is ready, turn out onto a floured work surface and punch down a few times before shaping into a rough rectangle.

9. Use a rolling pin to roll dough into a large, even rectangle, approximately 18- x 10-inches.

10. Brush the melted butter all the way to the edges of the dough. Spread the sugar-cinnamon mixture evenly over the butter, leaving a 1/2-inch border on one of the long edges.

11. Starting with the opposite long edge, slowly roll the rectangle into a log, and gently press to seal along the buttered edge.

12. Place the log seam-side down and, using a serrated knife, slice into pieces approximately 1 1/2-inches wide.

13. Place rolls into a buttered baking dish and cover with plastic wrap. You may find it helpful to place the rolls with the loose ends tucked against the side of the pan to prevent from unrolling. Refrigerate overnight for a slow rise (the dough will slowly rise again for a second time). Alternatively, let them rise for an hour in a warm place in your kitchen.

14. The next morning (or after the second rise), pre-heat the oven to 350°F. If you removed the rolls from the refrigerator, allow them to come to almost room temperature, approximately one hour. You should also remove your frosting ingredients from the fridge and allow them to come to room temperature during this time.

15. When the rolls are ready, bake on a rack in the middle of the oven until set and golden brown on top, about 25 to 30 minutes. Cool in the pan on a wire rack for 10 minutes before frosting.

16. Make the frosting while the rolls are baking. In the bowl of a stand mixer with a paddle attachment or in a large bowl with an electric mixer, cream together the butter and cream cheese. Mix in the maple syrup, and then the powdered sugar in two parts, mixing until smooth and fluffy. If the frosting is still too stiff, you can thin it out a little with some milk.

17. Spread frosting generously over the tops of your piping hot rolls. Serve them up and enjoy!

It’s time for our favorite holiday that celebrates accordingly with chocolate, hearts and the color pink: Galentine's Day! The love between gal pals is undeniable and totally worth celebrating. During this stage of life that we so lovingly call “adulthood,” we rely on our girls to support us through our jobs, the modern and scary world of online dating and any and all quarter-life crises. Let’s face it: We love and need our girlfriends. That’s why a day like Galentine’s Day is quite possibly the best day of the year!

Today we’re teaming up with Studio Ink to show you how to host the most epic Galentine’s Day brunch. We’ve got everything from red velvet heart waffles to DIY centerpieces to Galentine card writing stations. Decorate your table with a few gold bottles and single flower stems. You don’t want your table to be too cluttered, because you’ll want to also have space for all the card writing you’ll do!

There are some rom-coms you can never watch too many times. For me, it's Set It Up and 13 Going on 30. There is just something about the magic of watching two friends fall in love that restores my faith in humanity every time I press play. Plus, it doesn't hurt that both of those movies revolve around female writers in New York City. It's like I'm watching a different version of my life play out onscreen!

In honor of a friend's 30th birthday, I just rewatched the 13 Going on 30 movie, and in addition to my usual kicking-my-feet-and-screaming reaction the whole time, I noticed a detail about the end I'd never seen before — and it makes the whole movie so much more impactful.

What happens at the end of 13 Going on 30?

After Jenna returns from her time jump (which I'm firmly convinced is a dream), reconnects with Matty, and bravely confronts Tom-Tom and the Six Chicks, we see one of my favorite rom-com endings ever. Jenna and Matt (played by Jennifer Garner and Mark Ruffalo) tie the knot and settle into a charming pink house before sharing a packet of razzles. However, one detail about the whole scene means I'll never watch 13 Going on 30 the same way again: the house they move into as a married couple mirrors the dream house Matty thoughtfully created for Jenna's 13th birthday party.

The fact their real house looks exactly like the dream house is much more than a fun design detail. This connection between their past life and their present life carries profound emotional implications because it reflects Matty's unwavering devotion to Jenna's dreams.

Do Matt and Jenna end up together in 13 Going on 30?

We see right from the beginning of the movie that there's always been a bond between Matty and Jenna. They have inside jokes, and even though they both have opposite reactions to middle school popularity, they know they can count on each other. And the dream house is the one object that represents both how well Matt knows Jenna and how much he genuinely cares about what she cares about.

His willingness to create the dream house in the first place highlights his attentiveness and kindness, especially since it's filled with so many things she loves. Matt's entire arc — from making the dream house to splitting a pack of Razzles at the park because Jenna loves them — shows that he loves with his actions. After he warms up to the idea that Jenna's in his life again, he loves her with open arms, and it takes Jenna learning he's engaged to someone else to realize she loves him back.

What is the lesson of 13 Going on 30?

Jenna finally accepting Matt and his pink house after throwing him out of her birthday party as kids highlights her own growth as a character. After an entire movie where Jenna moves through her supposed dream life, the 13 Going on 30 movie ending highlights that her true dream life is one spent with the person she loves — not one that gives her a glitzy lifestyle at the expense of all her relationships.

The end of the movie isn't about giving up an independent lifestyle or swapping the excitement of New York City for the suburbs. It's more that Jenna did get everything she ever wanted — the job, the money, the fashion — but she was doing it all alone. She got to the top, and it didn't make her happy. To me, the true lesson in 13 Going on 30 is that relationships in all their forms are so much more meaningful than whatever material things we could accumulate.

Mark Ruffalo is literally such a perfect Matt that I can't believe he almost backed out of 13 Going On 30 altogether! Because of his initial hesitation to dance in the Halloween party's "Thriller" scene, Jennifer Garner had to convince him to stay in the movie.

"The dancing was horrible. I almost didn't want to do this movie," he says in an interview. "I literally read it and I'm like 'I can't do this movie. I can't get up and do those scenes'...When [Jennifer Garner] dragged me out (onto the dance floor) she was literally dragging me out and I had hours of rehearsal with a dance coach who taught me how to do all the moves and stuff and still, when we got into actually shooting it and there were 300 extras around, I did not want to do that scene."

But Mark Ruffalo's nerves (and his self-perceived lack of dancing skills) definitely go unnoticed onscreen. And the fact that Mark can seamlessly capturing the essence of stepping out of your comfort zone for love shows just how perfect he is for the role — and makes me love him even more.

After The O.C., Rowan starred in a handful of films and television shows, but she hasn't acted much recently — her last project was a movie called Tulips In Spring in 2016. She was previously engaged to David Thomson (who she shares a 16 year old daughter with), but according to Hello! they broke it off before the wedding bells rang.

Melinda Clarke, known for playing Marissa Cooper's mother, made a brief return to The O.C. world with Rachel Bilson on their rewatch podcast which ended in 2023. From 1997 to 2005, Clarke was married to Ernie Mirich, and they share one child together. She's been with her current husband, Adam Farmer, since 2015. Clarke still acts, with titles like Fantasy Island, The Vampire Diaries, and Entourage under her belt since her stint on The O.C.

Tate Donovan — Jimmy Cooper

The other half of Marissa Cooper's parents, Tate Donavan just played Stanley Clotfelter in the award-winning film The Holdovers. Donovan is no stranger to the screen either, working on projects like Ghosted, Rocketman, and Argo. One of my fave works of Donavan's has to be his voice acting as Hercules in the Disneyclassic of the same name — truly iconic! Donovan was married to Corinne Kingsbury from 2005 to 2008, and hasn't remarried since.
