These are seriously yummy. I mean come on, what is not to like about cinnamon and raisin oatmeal cookies?

Sometimes you just want proper cookies, and for less than your daily syns you actually can make and enjoy homemade cookies. I know there are various recipes out there using just sweeteners and a few other ingredients to make them syn free, and while same taste okay, they don't really taste like a cookie and when I need fresh baked cookies, I need REAL fresh baked cookies.

The whole recipe makes 15 cookies and you can enjoy 3 of these using your healthy extra B choice and 5 syns. So if you are making just for you and you want to stop any temptation to eat any more than the mentioned allowance. Once they cool, place the tray in the freezer with the remainder of the cookers and freeze, then once frozen you can pop into a ziplock bag.

When you want to treat yourself, all you have to do is preheat your oven to 180c or 350f (gas mark 4) and place them on a tray and back in the oven for a bit. The best part is the oven will warm them up again. Just keep an eye on them, as they won’t take long and you don’t want to burn them.

These are great served with yoghurt and some fruit of your choice (I chose some mandarin orange), but really you could have any fruit you like. These Cinnamon and Raisin Oatmeal Cookies are perfect with a cup of tea or coffee.

Tea is, of course, my favourite with these. It just doesn't seem right to make a cup of tea without a cookie or biscuit to go with it.

If you love a more decadent cup of tea, there are even some amazing flavoured teas you can get now. Some of my favourites are the flavoured black tea's you can get from David's Tea here in Canada. With a drop of milk from my Healthy Extra A allowance, there feel so indulgent and most are syn free.

Seriously if you ever visit Canada, be sure to source a David's Tea store (there are some stores in the US, but the majority are here in Canada), and treat yourself to some of the amazing teas they have. So many to choose from - black tea, green tea, rooibos, white tea, herbal teas etc.

If you are ever lucky enough to be able to pop into a store around November time, they also have these amazing Advent Calenders they bring out each year. In the lead up to Christmas, each day in December, you open a door on the advent calendar to a beautiful tea to enjoy. It's perfect for those trying to be healthier who want to avoid the chocolate advent calendars and save our syns for other treats we can enjoy.

So while the kids have the chocolate-themed advent calendars, I get to enjoy a lovely new tea each day. It's perfect!!

These Cinnamon and Raisin Oatmeal Cookies can also be made gluten and dairy free, just ensure the oats are gluten free verified and if you are dairy free you can substitute the butter for coconut oil.

As these cookies are made with just oats and no actual flour, they are a softer type cookie in the centre, with a slightly crisp exterior. My kids love them and while I get my allowance of 3 for a Healthy Extra B choice and 5 syns, I rarely get a chance to freeze some for another day, as before I know it, the kids and hubby have scoffed the rest.

Cinnamon Raisin Oatmeal Cookies

Ingredients

  • 200g/7oz of oats (5xHEb)
  • 45g/1.6oz of brown sugar
  • 3 tbs of sukrin:1 (or another sweetener of choice)
  • 3 tbs of butter
  • 15g/0.5oz of raisins, sliced in half
  • 1 egg
  • ½ teaspoon of vanilla extract
  • ½ teaspoon of cinnamon
  • ½ teaspoon of baking soda
  • 2 tbs of water

Instructions

  1. Preheat oven to 180c or 350f (gas mark 4)
  2. Place 1 cup of oats in a blender or food processor and pulse the blade a few times to finely chop up the oats.
  3. Add this to a bowl, with the other cup of oats, cinnamon, baking soda, and raisins.
  4. In another bowl mix together the butter, brown sugar and sukrin: 1 and then whisk in the egg, vanilla extract, and water.
  5. Add this to the oat mixture, and stir to thoroughly combine.
  6. Line a baking tray with parchment paper and add 15 equal sized balls of the mixture onto the tray, Flatten into a cookie shape.
  7. Place in the oven and bake for approx 20-25 mins till golden.
