In my daydreams, I’m that June Cleaver-esque mom, who gets up before everyone else on Christmas morning and lovingly prepares a special Christmas breakfast. Everyone wakes to the smell of whatever wonderful thing is cooking and comes downstairs, wide-eyed and full of Christmas cheer.

The reality is that ever since Alex was 2 years old she’s never been up on Christmas morning before 9 or 10. She’s always preferred to sleep in, safe in the knowledge that everything will still be there whenever she rolls out of bed.

And me?

Alex nicknamed me the Kraken. As in “Please don’twake the Kraken before she’s had her coffee.”

Not very merry.

So years ago I began collecting recipes for Christmas breakfast that could be thrown together the night before and tossed in the oven while we are unwrapping presents, no matter how late in the day that happens. Christmas mornings are hecticenough without trying to cook breakfast, open presents, and keep an eye on everything else at once!

Cheesy Tater Tot Breakfast Bake– I love a good tater tot casserole and this has all my favorite breakfast bits like sausage, cheese,and eggs in it too! Mix it up the night before and leave it in the fridge. Pop it in the oven about an hour before you want to eat. How easy is that?

Crockpot Overnight Breakfast Casserole – This one is even easier! Mix hashbrowns, sausage, bacon, 2 kinds of cheese, onions, peppers, milk, and eggs together and put it in the crockpot. Cook on low all night. When you wake up in the morning, you’ll only need to serve it up. If you can keep the kids from eating straight from the crockpot, that is. The struggle is real.

Sausage and Gravy Breakfast Casserole – I love this idea. We love biscuits and gravy but don’t make them often. This make-ahead casserole takes the fuss right out of it. Cook the sausage and gravy in a skillet beforehand. Pour it into a baking dish and top with biscuit dough. Refrigerate until you’re ready to bake. That’s brilliant.

French Toast Bake – I can never seem to make good French toast if I just make it for breakfast. I’ve only ever had luck with the kind that sits overnight and then bakes the next day. This is a really easy recipe that uses Texas toast, brown sugar, melted butter, eggs, milk, and vanilla. Chill overnight and bake for 45 minutes when you’re ready. Top with powdered sugar and syrup. Obviously.

Overnight Cinnamon Rolls – I have a recipe for homemade cinnamon rolls that are to die for. But they take a looooong time to make so it’s never at the top of my list of things that sound like fun to make. But this recipe is for cinnamon rolls that can be made ahead of time. Make the dough, let rise and roll out as usual. Instead of baking right away, cover tightly with plastic wrap and refrigerate. Pull out in the morning and let rise for an hour or so (or stick in a 100°F oven for 35 minutes). Bake at 350°F for 22-24 minutes. Cool and then frost with a cream cheese glaze. It doesn’t get any better than this.

Slow Cooker Gingerbread Oatmeal – ‘Tis the season and all that. If you want to go all festive for your Christmas breakfast try this overnight gingerbread oatmeal recipe. Use steel cut oats for this one and not quick or old-fashioned oats. Combine oats, water, molasses, and all your gingerbread spices in a slow cooker. Cook on low overnight and wake up to the smell of Christmas.

Three Cheese Grits Casserole – Alex and I both love us some grits. It must be the southern belle in us (ha!). Where we differ is how we like to eat them. Alex likes to put syrup on hers. I like mine covered in butter with just a pinch of salt because my mother raised me right. Not sure where I went wrong with that one… Anyway, cook grits in half-and-half and milk, add butter, 3 kinds of cheese, eggs,and spices. Pour into a baking dish and chill until you’re ready to put in the oven. Bake for 20-25 at 350°F.
